The exact origin of the dish still remains unknown but according to food historians Gyro arrived in Greece in the early 1920s along with refugees primarily from Constantinople (now Istanbul) and Smyrna (now Izmir). Many of these people were of Greek descent and along with them, they brought the tradition of the Gyro. The dish spread across Greece and as their citizens emigrated to other countries (such as the United States and Canada) they eventually brought the traditional meal with them.
Gyro is a traditional Greek sandwich that is served with pita bread. In Greek “Gyro” means round and thus refers to piled meat that has been grilled on a vertical rotisserie. A traditional gyro is made by firstly chopping the meat into thin slices, after which it is seasoned with a mixture of salt, pepper, sweet paprika, and finely crushed Greek oregano. The seasoned meat is then sprinkled with some vinegar. The process of seasoning and adding vinegar is repeated until all the meat is seasoned and coated. To prepare the rotisserie skewer, a skewer is set into a wooden base to keep it upright. Small pieces of meat are then laid on the metal base plate overlapping so that there are no spaces between the meat and the skewer. Layers of meat are stacked to form a cone which is then compressed to pack solid. Then before placing the meat into the rotisserie grill to cook, a thin layer of fat is placed on top of the meat. So as the meat cooks, the fat seeps into it and keeps the meat moist. Finally, the meat is cooked on the grill for about an hour and rotated often to cook evenly.

To prepare the Gyro Sandwich, Pita bread is grilled and placed on a butcher’s paper, which is then topped with Tzatziki, which is a sauce made with creamy Greek Yoghurt, and then slices of tomatoes and onions are added. Finally, the meat is cut into thin juicy slices and added to the sandwich, which is then often topped with some potato fries and the sandwich is wrapped up in the butcher paper it was built on and voila! The sandwich is ready.
